Varenyky (also known as Perogies, Pyrohy, Pedehey or heaven on a plate), a staple Slavic fare for centuries, are 1 of the 12 traditional dishes for the Sviat Vechir (Christmas Eve Holy Supper). They are dumplings stuffed with a variety of delicious fillings. In our home, the smell of Christmas was not cinnamon and apple spice, but the aromas of onions and mushrooms simmering in butter. Although time consuming, they are simple to make with easy to find ingredients. This recipe has been handed down in our family and we have added our own personal modifications. In Ukraine, this dish is always prepared fresh. However, with time in short supply during the holiday season, we have developed a method for preparing the Varenyky weeks in advance and still maintain the savory taste and freshness. For those who need help, we have put together a step by step illustrated guide. We do not proclaim to be an expert in Ukrainian Cuisine, but only offer this to those who never had the opportunity to learn how to make what has to be Ukraine's national dish, Varenyky. |
